Chicken tamale pie

 Well smack my butt and call me Rosita! I made this delicious chicken tamale pie and I felt like an authentic mexican cook! My husband said I was "flirting with greatness" with this meal. Its funny because its not like I come up with these meals but all the same I will take the credit for them if they turn out amazing!!! And this boast to be a low calorie meal. Bottom line is we loved it and its quite filling too.  I don't have a pie tin (gasp) so i just used a smaller baking dish and it turned out the same. I didn't use the egg substitute either, my bad! Its so good, you have to try this one ; ) Happy pinning!
